In kleine groepjes, onder begeleiding wordt er lunch gemaakt voor alle jongeren en medewerkers van de stichting. Alles op basis van verse ingredienten. Zelf brood, verse pasta, soepen en sauzen maken.<\/p>\n\n\n\n<p> Alles wat je normaliter in een keuken aan basiskennis opdoet komt voorbij. Snij-technieken,  bewaar-technieken, HACCP regels, etc.<br>Tussen 12.30 uur en 13.30 uur wordt er geluncht. Hiervoor mogen jongeren af en toe gasten uitnodigen, zodat ze kunnen laten zien wat ze geleerd hebben.<br>Na de uitgebreide lunch met gemiddeld 40 mensen wordt de keuken weer netjes opgeruimd.  Dan volgt er een nabespreking, waarin uitgebreid ge\u00ebvalueerd wordt hoe het ging en wat de planning voor de volgende dag is.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Leerdoelen:<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Werknemers vaardigheden op doen<\/li>\n\n\n\n<li>Kennismaking met de HACCP regels<\/li>\n\n\n\n<li>Kennismaking met keukentechnieken<\/li>\n\n\n\n<li>Kennismaking met minder bekende ingredi\u00ebnten en recepten<\/li>\n\n\n\n<li>Mise-en-place leren bereiden<\/li>\n\n\n\n<li>Werkruimtes opruimen en schoonmaken<\/li>\n\n\n\n<li>Voorraad controleren en bijvullen<\/li>\n\n\n\n<li>Invullen van lijsten (voorraad lijst, mise-en-place lijst, schoonmaaklijst etc..)<\/li>\n\n\n\n<li>Bereiden van gerechten<\/li>\n\n\n\n<li>Uitwerken van recepten op papier en daarmee een eigen kookboek samenstellen<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Extra<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li>CV maken<\/li>\n\n\n\n<li>Sollicitatie training volgen<\/li>\n\n\n\n<li>KAS (keukenassistent) en BAS (bedieningsassistent) training volgen<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>Het Horecatraject start iedere ochtend met een werkoverleg, waarin de taken verdeeld worden.
